Bike Sizing! The shop didn't size me!
Ya odd they wouldn't size you or fit you after the purchase. 56cm is what I ride and I'm about the same size, but someone should look at your position on the bike and make sure you're setup correctly. If possible, look for someone that does bike fitting outside of that store and see what they say. Hard to gage over the internet but i think you should be fine.
Sizing and 'fitting' are different. The 56 sounds like about the right size, but like Tribro said, this discussion over the internet is kinda tough. You can go back - and should go back - and get 'fit' on it (change stem, adjust seat height, angle, etc.)
I am 5'10 and 155 pounds. I ride a 54 cm, but since I have longer legs than torso, when I went to get a fitting, I had to "shorten my cockpit" by pushing the saddle to the front and getting a shorter stem.
Do get a fitting somewhere outside the store.
Standover height isn't really that big of a deal with a road or tri bike. Instead, what matters is the stack and reach -- there are some good articles on it starting with http://www.slowtwitch.com/Bike_Fit/Stack_Reach_Primer_Chapter_One_95.html
So the bike might be a great size for you -- it just depends on your proportions. It's really hard to know online. And yes, some shops will size you just by seeing you on the bike and if it looks ok. So chances are that is all they were doing. It's not necessarily the best, but it is often what shops do.

Yeah I am purchasing a Tri-bike as we speak and when I was looking at a Trek the bike was a 56; but when I looked at the specialized it would be a 58. But my shop does a professional Tri fitting for free, the owner attended some clinic for Triathlon fittings.
I would pay the money and get a proper fitting
I ride a 56 cm myself, 5'10 and 153, and after the usual ride and tweeks that size frame works great for me. It is weird they eyed you up for your size but I wouldnt worry about it too much, just make sure you go somewhere and get it properly fit.
Fitting is crutial I am 6'2 and I ride a 58, what you would expect, it is important for a proper bike fit for proper power distribution.
I was fit at my LBS using their system that placed a profile on a computer after using a laser system of some sort (really not sure as to the specific name of the system) - But im 5'9.5 160 lbs and they had me in-between a 54 and 51. They sized me down for tighter fit - point is - height is NOT the only factor to consider when fitting - must take into account arm length, torso length, leg length as well.

This is my second tri season but my first tri bike. I bought my bike in Arlington, VA.
When I purchased the bike i was confused why they didn't size me first so I could purchase a frame size proportion to my height... They didn't. I was slightly disturbed by this.
I picked up my bike today and I LOVE it!!! I used to ride an old mountain bike w/ road tires but this is tons faster.
I'm 5'10 (155 lbs) and I'm using a 56CM frame. I hear 56CM is the typical size for my height but after calling around various bike shops, they say that they've seen 54CM frames for 5'10" people before.
After a bit of research when I got home.. I read that your crotch should clear the top tube by 1-2 inches.. Which it does on my bike, w/ my running shoes on (I think i have long legs).. Should this be a concern? bare footed, my crotch is almost touching the bar..
I spent 1500$$ on my bike which is a lot of money for me. For this much money, I'd hope this bike would fit me like a glove!
